Description

Ingredients (18 ingredients)

  • 1 cup butter
  • 0.33333333333333 cup unsweetened cocoa powder
  • 1 cup water
  • 2 tablespoons instant espresso powder
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 0.5 cup milk
  • 2 piece eggs, lightly beaten
  • 0.25 cup butter
  • 3 tablespoons unsweetened cocoa powder
  • 3 tablespoons strong brewed coffee
  • 0.5 teaspoon ground cinnamon
  • 1 tablespoon milk, or more as needed
  • 2 cups sifted confectioners' sugar

Preparation (9 steps)

Prepare the oven and pan

Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15-inch jelly roll pan. This step is done outside of the Thermomix.

Melt butter and cocoa

Add 1 cup butter, ⅓ cup cocoa powder, 1 cup water, and 2 tablespoons instant espresso powder to the Thermomix bowl. Mix until smooth. Set the Thermomix to 3 Min./50°C/Stufe 2.

Combine dry ingredients

Add 1 cup white sugar, 1 cup brown sugar, 2 cups all-purpose flour, 1 ½ teaspoons ground cinnamon, and 1 teaspoon baking soda to the Thermomix bowl. Mix for 10 Sec./Stufe 3 to combine.

Add wet ingredients and mix

Pour in the butter-cocoa mixture, 1 teaspoon vanilla extract, ½ cup milk, and 2 lightly beaten eggs to the Thermomix bowl. Mix until fully incorporated. Set the Thermomix to 20 Sec./Stufe 4.

Bake the cake

Pour the batter into the prepared baking sheet and bake in the preheated oven until the cake springs back when touched lightly with a finger, about 18 minutes. Cool the cake in the pan on a wire rack. This step is done outside of the Thermomix.

Melt butter for icing

2 min/122°F/Speed 1 50

Add ¼ cup butter to the Thermomix bowl. Melt the butter by setting the Thermomix to 2 Min./50°C/Stufe 1.

Make the icing

10 sec/Speed 3

Add 3 tablespoons cocoa powder, 3 tablespoons strong brewed coffee, ½ teaspoon ground cinnamon, and 1 tablespoon milk to the Thermomix bowl with the melted butter. Mix for 10 Sec./Stufe 3.

Add confectioners' sugar

20 sec/Speed 3

Slowly add 2 cups sifted confectioners' sugar to the Thermomix bowl and beat until smooth. Add milk as needed to reach the consistency you like. Set the Thermomix to 20 Sec./Stufe 3.

Spread the icing

Spread the icing over the cooled cake. For easier serving, score the icing before cutting the cake: mark lines as a guide before you start to cut, and divide the cake into 32 pieces. This step is done outside of the Thermomix.
