Description

This vegetable crown tart is a true ode to summer! I love preparing it for a sunny brunch or a light lunch. The crispy puff pastry contrasts wonderfully with the sweetness of the courgettes and the burst of cherry tomatoes. The feta brings a touch of freshness and the pine nuts, an irresistible crunch. It's a simple dish to make with the Thermomix®, which allows you to prepare the vegetables in a flash. Feel free to vary the vegetables according to your desires and the season. A real treat for the eyes and the taste buds!

Ingredients (9 ingredients)

  • 1 piece puff pastry
  • 1 piece courgette
  • 12 piece cherry tomatoes
  • 50 g feta
  • 1 poignée pine nut
  • 1 piece egg yolk
  • to taste Olive oil
  • to taste Flower of salt
  • 1 c. à s. milk

Preparation (5 steps)

Preparation of vegetables

Wash and dry the courgette and cherry tomatoes. Using a vegetable peeler, cut the courgette into thin slices. Cut the cherry tomatoes in half.

Preparation of the dough

Unroll the puff pastry on a baking sheet covered with baking paper. With a knife, cut a circle in the center of the dough to form a crown.

Garnishing the tart

Spread the courgette slices and the halved cherry tomatoes on the pastry crown. Crumble the feta over the vegetables. Sprinkle with pine nuts.

Gilding

In a small bowl, mix the egg yolk with the tablespoon of milk. Brush the dough with this mixture using a brush.

Cooking

Preheat the oven to 180°C (thermostat 6). Bake the tart and cook for 30 minutes, or until the pastry is golden brown and the vegetables are tender. Sprinkle with flower of salt when removed from the oven.
