Description

This fruit cake with almonds is a delicious recipe for the winter season. The cake is easy to prepare and is ideal for a cozy afternoon. The combination of almonds and fresh fruit makes this cake a special treat. It is light and juicy and can be prepared with various types of fruit.

Ingredients (9 ingredients)

  • 140 g Egg white
  • 120 g Icing sugar
  • 120 g Almond pulp
  • 80 g Flour
  • 80 g Oil
  • 1 EL Vanilla sugar
  • 1 Schuss Egg liqueur
  • 1 TL Lemon-salt paste
  • 400 g Fruit

Preparation (4 steps)

Mix eggs and sugar

Add 140g egg white (approx. 4 pieces) and 120g icing sugar to the mixing bowl and mix for 2 min./speed 3.

Add remaining ingredients and mix

Add 120g almond pulp, 80g flour, 80g oil, 1 tbsp vanilla sugar, 1 shot of egg liqueur (if available) and 1 tsp lemon-salt paste or lemon zest and salt to the mixing bowl and mix for 30 sec./speed 4.

Fold in the fruit

Carefully fold 400g fruit into the batter.

Bake

Pour the batter into a cake pan and bake in a preheated oven at 180°C top/bottom heat for about 30 minutes.
