Description

This cherry sour cream cake from the baking sheet is a juicy treat with a nutty base and creamy vanilla filling. The combination of sweet cherries and refreshing sour cream makes it ideal for summer. With the Thermomix® the preparation is quick and easy. The cake is perfect for birthdays or as a delicious accompaniment to coffee.

Ingredients (15 ingredients)

  • 150 g Hazelnuts
  • 50 g Almonds
  • 200 g Butter (cold)
  • 100 g Sugar
  • 1 Päckchen Vanilla sugar
  • 1 Prise Salt
  • 1 Stück Egg
  • 500 g Sour cream
  • 150 g Sugar
  • 1 Päckchen Vanilla sugar
  • 1 Päckchen Vanilla pudding powder
  • 2 Stück Eggs
  • 750 g Cherries
  • 150 g Cherry juice
  • 1 Päckchen Cake glaze

Chop nuts

Thermomix® Setting

Put 150 g hazelnuts and 50 g almonds in the mixing bowl and chop for 8 sec./speed 6. Transfer and set aside.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 200 g cold butter in pieces, 100 g sugar, 1 packet vanilla sugar, 1 pinch of salt, 1 egg and the chopped nuts in the mixing bowl and process for 2 min./kneading stage to a dough.

Roll out dough and form base

Roll out the dough on a baking sheet lined with baking paper and form a small edge. Prick the dough base several times with a fork.

Prepare filling

Put 500 g sour cream, 150 g sugar, 1 packet vanilla sugar, 1 packet vanilla pudding powder and 2 eggs in the mixing bowl and stir for 20 sec./speed 3.

Put filling on the dough

Pour the sour cream filling on the dough base and distribute 750 g cherries on top.

Bake cake

Bake the cake in a preheated oven at 180°C top/bottom heat for about 45 minutes.

Prepare glaze

Thermomix® Setting
5 min/212°F/Speed 2 212°F

Put 150 g cherry juice and 1 packet cake glaze in the mixing bowl and bring to a boil for 5 min./100°C/speed 2.

Distribute glaze

Distribute the cake glaze evenly on the cake and let it cool.
