Description

This mandarin dream cake is a real eye-catcher and tastes simply fantastic! The juicy base, the fruity mandarin glaze layer, and the creamy whipped cream topping make it an unforgettable treat. I especially like to make this cake when I'm expecting guests, because it's super easy to prepare and always goes down well. The combination of sweet mandarins and the light vanilla note is simply irresistible. A perfect cake for birthdays, brunch, or just with coffee!

Ingredients (14 ingredients)

  • 5 piece Egg(s)
  • 3 tbsp Sugar
  • 3 tbsp Flour
  • 0.5 packet Baking powder
  • 1 packet Vanilla sugar
  • 3 can Mandarin(s)
  • 750 ml Juice collected mandarin juice, add water if necessary
  • 2 packet Cake glaze white
  • 2 packet Cake glaze red
  • 600 ml Sweet cream
  • 3 packet Cream stiffener
  • 3 packet Vanilla sugar
  • 3 packet Sauce powder Vanilla sauce, without cooking
  • 300 ml Juice Multivitamin juice

Preparation (12 steps)

Separate eggs and mix egg yolks

Separate the eggs. Put 5 egg yolks, 3 tablespoons of sugar, 3 tablespoons of flour, 0.5 packets of baking powder and 1 packet of vanilla sugar into the mixing bowl and mix for 20 sec./level 4.

Whisk egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5

Put 5 egg whites into the mixing bowl and whisk with the butterfly for 3 min./level 3.5 until stiff.

Mix batter

Carefully fold the stiffly beaten egg white into the batter.

Bake batter

Place the batter on a small baking sheet and bake in a non-preheated oven at 160°C convection oven on the middle rack for approx. 20 minutes.

Drain mandarins and collect juice

Drain 3 cans of mandarins, collecting the juice. Measure out 750 ml of the juice and add water if necessary.

Prepare cake glaze

8 min/212°F/Speed 2 100

Put 750 ml of mandarin juice, 2 packets of white cake glaze and 2 packets of red cake glaze into the mixing bowl and bring to the boil for 8 min./100°C/level 2.

Add mandarins

Thermomix® Setting

Add the drained mandarins to the mixing bowl and stir in for 5 sec./reverse/level 1.

Spread mandarin mixture

Spread the mandarin mixture on the baked batter.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Put 600 ml cream, 3 packets of cream stiffener and 3 packets of vanilla sugar into the mixing bowl and whisk with the butterfly for 2 min./level 3.5 until stiff. Observe the consistency.

Spread cream

Spread the whipped cream on the mandarin mixture.

Prepare vanilla sauce

Thermomix® Setting
20 sec/Speed 3

Put 3 packets of vanilla sauce without cooking and 300 ml of multivitamin juice into the mixing bowl and mix for 20 sec./level 3.

Spread vanilla sauce and refrigerate

Pour the vanilla sauce over the cream. Refrigerate the cake until ready to serve.
