Description

This grated potato omelette is a different and delicious version of the classic Spanish omelette. The grated potato gives it a very special texture, softer and creamier. It is perfect for a quick and tasty meal, or even to take on a picnic. I prepare it often because it is very easy and everyone at home loves it. Also, you can customize it by adding other ingredients such as pepper or chorizo. Go ahead and try it, you will be surprised how delicious it is! The key is to cook the potatoes over low heat so that they are very tender.

Ingredients (8 ingredients)

  • 400 gr large potatoes
  • 100 gr small onion
  • 1 clove garlic
  • 2 ramitas parsley
  • 1 rábano radish
  • 3 piece eggs
  • 3 tbsp olive oil
  • 1 pinch salt

Preparation (8 steps)

Prepare the potatoes

Peel the large potatoes (400 gr) and grate them. Set aside.

Prepare the onion and garlic

Peel the small onion (100 gr) and grate it. Peel a clove of garlic and chop it finely. Chop also 2-3 sprigs of fresh parsley. Set aside.

Sauté the potatoes

Thermomix® Setting
30 min/194°F/Giro a la izquierda/Velocidad cuchara 90 Reverse

Pour 3 tbsp of olive oil into the Thermomix bowl. Add the grated potatoes and a pinch of salt. Program 30 Min./90°C/Reverse rotation/Spoon speed.

Add the onion and garlic

15 min/194°F/Giro a la izquierda/Velocidad cuchara 90 Reverse

Add the grated onion, chopped garlic and a pinch of salt to the Thermomix bowl. Program 15 Min./90°C/Reverse rotation/Spoon speed.

Add the parsley

Thermomix® Setting
5 min/194°F/Giro a la izquierda/Velocidad cuchara 90 Reverse

Add the chopped parsley to the Thermomix bowl. Program 5 Min./90°C/Reverse rotation/Spoon speed.

Mix with the eggs

Pour the potato, onion, garlic and parsley mixture into a bowl. Beat 3 eggs in a separate bowl and add them to the potato mixture. Mix well until homogeneous.

Set the omelette

Pour the mixture into a non-stick frying pan with a few drops of olive oil. Cook over low heat, turning the pan to set the egg. Turn it over a couple of times until it is done.

Serve

Plate and decorate with a few slices of radish (optional). Serve hot.
