Description

This chicken in pepitoria sauce is a comfort food that reminds me of my childhood. The sauce, thick and full of flavor thanks to the saffron and almonds, is simply delicious. Although it requires a bit of time, the result is worth it. It is perfect for a family meal on a cool day or for a special occasion. The combination of tender chicken with the rich sauce and toasted almonds is a true pleasure. Go ahead and prepare it, you will love it! You can accompany it with white rice or steamed potatoes.

Ingredients (13 ingredients)

  • 1 piece Whole chicken
  • 2 piece Onion
  • 40 g Wheat flour
  • 1 clove Garlic
  • 1 pinch Saffron
  • 1 copa Sherry wine
  • 500 ml Chicken broth
  • 50 g Ground almond
  • 50 g Flaked almond
  • 1 piece Egg
  • 1 pinch Extra virgin olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation (8 steps)

Chop the onion

Thermomix® Setting

Cut the onions into quarters and place them in the bowl. Chop for 3 sec./Stufe 5.

Onion sauce

Thermomix® Setting
8 min/248°F/Speed 1 120

Add extra virgin olive oil to the bowl with the chopped onion. Sauté for 8 Min./120°C/Stufe 1. The goal is a white sauce, so watch that the onion does not brown.

Prepare the chicken

While the onion is sautéing, season the chicken with salt and pepper. Pass the chicken slices through wheat flour.

Fry the chicken (outside the Thermomix)

In a pan with extra virgin olive oil, lightly fry the chicken without browning the skin, simply to seal it. Set aside.

Add garlic and ground almond

Add the garlic clove cut into slices and the ground almond to the bowl with the onion. Stir quickly for 10 Sek./Stufe 2.

Reduce the Sherry wine

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Incorporate the Sherry wine into the bowl and program 3 Min./Varoma/Stufe 1, without the measuring cup, to reduce.

Cook the chicken

35 min/212°F/Giro a la izquierda/Speed 1 100 Reverse

Put the reserved chicken slices in the bowl. Add the chicken broth, the previously toasted saffron threads and salt. Program 35 Min./100°C/Giro a la izquierda/Stufe 1.

Thicken the sauce

Thermomix® Setting
2 min/194°F/Giro a la izquierda/Speed 1 90 Reverse

When the chicken is almost ready, add the cooked egg yolk to the bowl and program 2 Min./90°C/Giro a la izquierda/Stufe 1 to thicken the sauce.
