Description

This lasagna with pistachios and speck is an explosion of flavors! The combination of creamy pistachio pesto with béchamel, smoked speck and stringy mozzarella makes it a truly special dish. Perfect for a Sunday lunch with the family or a dinner with friends, this lasagna is a tasty alternative to the classic recipe. The preparation takes a little time, but the result is guaranteed. A suggestion? Prepare it in advance and bake it just before serving, it will be even better! Ideal for those who love strong and original flavors.

Ingredients (8 ingredients)

  • 150 g natural pistachios
  • 80 g sunflower seed oil
  • 500 ml béchamel
  • 200 g thin sheets ready for lasagna
  • 250 g diced mozzarella
  • 60 g grated cheese
  • 200 g sliced speck
  • chopped pistachios for garnish

Preparation (7 steps)

Pistachio pesto

Thermomix® Setting
10 Sec./Speed 8, 20 Sec./Speed 6

Put 150 g of natural pistachios in the bowl and chop for 10 Sec./Stufe 8. Add 80 g of sunflower seed oil and blend for 20 Sec./Stufe 6, until a creamy pesto is obtained. Transfer the pesto to a bowl and set aside.

Preparation of pistachio béchamel

Pour 500 ml of béchamel into the bowl with the pistachio pesto and gently mix with a spoon until a homogeneous mixture is obtained.

Lasagna assembly

Preheat the fan oven to 170°C or static to 180°C. Take a 30x20 cm baking dish and spread a layer of pistachio béchamel on the bottom.

Creation of the layers

Place the first sheet of lasagna pasta on top. Distribute more pistachio béchamel, a few slices of 200 g of speck and 250 g of diced mozzarella and 60 g of grated cheese.

Repetition of the layers

Continue with the other layers, alternating sheets, pistachio béchamel, speck, mozzarella and grated cheese, until the ingredients are finished.

Final layer and garnish

On the surface, spread a layer of pistachio béchamel, sprinkle with grated cheese and garnish with chopped pistachios to taste.

Baking in the oven

Bake the lasagna in the preheated oven and cook for 35-40 minutes, until golden brown.
