Description

I love raclette! It is so sociable and everyone can top their pans as they please. This recipe is a collection of my favorite raclette variations. From hearty with Chorizo and cheese to exotic with Mango and shrimp, there is something for everyone. The preparation is a bit more complex, but it's worth it! I especially like the combination of blue cheese and honey. Try it out and be surprised! The different marinades for the grilled food can be prepared easily in the Thermomix®. This turns the raclette into a culinary highlight!

Ingredients (31 ingredients)

  • 600 g Potatoes (new potatoes)
  • 400 g Salt
  • 100 g Green olives
  • 100 g Black olives
  • 200 g Feta cheese
  • 50 g Pepper
  • 100 g Blue cheese
  • 50 g Honey
  • 100 g Chorizo
  • 500 g Raclette cheese
  • 400 g Beef fillet
  • 1 Glas Jalapenos
  • 4 Zweig(e) Cilantro
  • 200 g Cheddar
  • 1 piece Mango
  • 200 g Shrimp
  • 1 piece Lime
  • 1 tsp Brown sugar
  • 1 tbsp Soy sauce
  • 1 Pck. Brie
  • 50 g Grainy mustard
  • 4 Zweig(e) Thyme
  • 2 piece Pears
  • 100 g Fried pepperoni
  • 100 ml Olive oil
  • 4 piece Ears of corn
  • 200 g Mushrooms
  • 50 ml Sesame oil
  • 2 piece Avocados
  • 1 piece Apple
  • 100 g Cinnamon

Preparation (11 steps)

Prepare potatoes

Wash 600 g potatoes (new potatoes) and cook in a pot with salted water until they are done. Then drain and set aside.

Raclette pan with olives and feta

Cut 400 g beef fillet into thin strips. Place a few strips in a pan. Crush 50 g green olives and 50 g black olives over it. Spread 100 g feta cheese over it and season with 25 g pepper. Put the pan in the raclette grill until the cheese is baked golden brown. Serve with potatoes.

Raclette pan with blue cheese and figs

Cut the dried figs into small pieces and put them in the next pan. Cut 50 g blue cheese into slices and spread over the figs. Add 25 g honey and 25 g pepper and place in the raclette grill for a few minutes. Crumble pumpernickel. When the cheese has melted, spread a few breadcrumbs on the cheese and toast briefly.

Raclette pan with chorizo and raclette cheese

Dice 100 g chorizo and place in a pan. Place 100 g raclette cheese in slices on top. First place the pan on the grill plate so that the chorizo is lightly fried from below. Then bake in the raclette grill until the cheese is golden brown.

Raclette pan with beef, jalapenos and cheddar

Cut the remaining beef fillet into thin, bite-sized strips. Cut 1 jar of jalapenos into rings. Place a few jalapeno rings on the beef, top with some cilantro and 100 g cheddar cheese and bake in the raclette grill.

Prepare Asian raclette variation

Peel 1 mango and cut into cubes. Place in a bowl together with 200 g shrimp. Add the juice and zest of a lime, as well as 1 tsp brown sugar and 1 tbsp soy sauce and mix everything well.

Prepare Asian raclette pans

Place shrimp-mango mixture in a pan and bake in the raclette grill.

Raclette pan with brie, mustard and pear

Cut 1 pack of brie into slices and place in a pan. Spread 1 tsp of grainy mustard and some fresh thyme on top. Cut 2 pears into slices, add 2 slices to the pan and fry in the raclette.

Prepare marinade for grill plate

Halve 100 g fried pepperoni lengthwise. Marinate in a bowl with salt, pepper and 100 ml olive oil. Cut 4 ears of corn from the cobs with a knife, put some remaining marinade on the cobs. Quarter 200 g mushrooms and marinate with 50 ml sesame oil, pepper and salt. Cut 2 avocados into thick slices and toss through the mushroom marinade.

Prepare vegetables on the grill plate

Fry the marinated fried pepperoni, corn, mushrooms and avocado on the grill plate of the raclette.

Raclette pan with apple and goat cheese

Peel, dice and put 1 apple in a pan. Sprinkle 100 g cinnamon on top, spread goat cheese and some honey on the apples and bake in the raclette grill.
