Description

This recipe for veal rolls with Gorgonzola is a hearty main course, ideal for festive occasions. The veal cutlets are filled with Gorgonzola, Parma ham and sage before being cooked in a white wine broth. Preparation takes about 20 minutes and yields 6 servings.

  • 1 Stück Onion
  • 75 g Gorgonzola
  • 6 Scheiben Parma ham
  • 6 Stück Sage leaves
  • Salt
  • Pepper
  • 100 ml Broth
  • 100 ml White wine
  • 100 ml Cream

Preparation

Take the veal cutlets out of the refrigerator about 30 minutes before preparation.

Chop the onion

Peel and halve 1 onion and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté the onion

Leave the chopped onion in the mixing bowl. Sauté for 3 min./120°C/speed 1.

Prepare cutlets

Pat 6 veal cutlets dry with paper towels and flatten them.

Fill and roll cutlets

Cut 75 g Gorgonzola into 6 pieces. Spread 6 slices of Parma ham, 6 sage leaves and Gorgonzola on the cutlets, roll up and secure with toothpicks.

Sear the rolls

Attach Easyquick and heat the pot on the highest setting until the frying window, switch to a low setting. Remove the lid and sear the rolls on all sides.

Add onion cubes and deglaze

Add the sautéed onion cubes from the mixing bowl to the rolls in the pot and fry with them. Season with salt and pepper. Deglaze with 100 ml broth and 100 ml white wine.

Cook the rolls

Heat the pot on the highest setting until the steam window, switch to a low setting and cook in the steam area for about 8 minutes.

Refine the sauce

Remove EasyQuick after the cooking time, remove the meat rolls and keep warm. Add 100 ml cream to the sauce and let it simmer a little. Season the sauce with salt and pepper and serve together with the veal rolls.
