Description

The vegetable spätzle pan from the Thermomix® is a hearty and quick main course with spätzle, broccoli and mushrooms. Complemented by cooking cream and onions, it is a vegetarian dish that is ideal for student cooking. In just 30 minutes of preparation time, 4 servings are created. This recipe is an inexpensive and easy meal for everyday life.

Ingredients (13 ingredients)

  • 600 g Spätzle
  • 500 g Broccoli
  • 250 g Brown mushrooms
  • 150 ml Cooking cream
  • 80 g Onion
  • 200 g Carrots
  • 2 EL Vegetable oil
  • 0.5 TL Curry powder
  • 1 Prise Nutmeg, freshly grated
  • 1 Prise Black pepper from the mill
  • 1 Prise Salt
  • 100 g Mountain cheese, grated
  • 50 ml Water

Preparation (7 steps)

Prepare onion and carrots

Thermomix® Setting

Peel and quarter the onion. Peel the carrots and cut into coarse pieces. Place the onion and carrots in the mixing bowl and chop for 5 sec./speed 5. Scrape down with the spatula.

Sauté vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp vegetable oil to the onions and carrots in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare mushrooms and broccoli

Clean the mushrooms and slice them. Divide the broccoli into florets. Add both to the vegetables in the mixing bowl.

Cook the vegetables

8 min/212°F/Linkslauf Speed 1 100 Reverse

Add 50 ml water, 1/2 tsp salt, 1/4 tsp pepper, 1 pinch nutmeg and 1/2 tsp curry powder and cook for 8 min./100°C/Reverse speed 1.

Add spätzle

3 min/194°F/Linkslauf Speed 1 90 Reverse

Add the spätzle to the mixing bowl and heat for 3 min./90°C/Reverse speed 1.

Add cream and season

Thermomix® Setting
1 min/194°F/Linkslauf Speed 1 90 Reverse

Add the cooking cream and heat for 1 min./90°C/Reverse speed 1. Season with salt and pepper.

Serve

Serve the spätzle pan immediately and sprinkle with grated mountain cheese.
