Description

This sunny dish, a variation of the classic ratatouille, highlights the rich flavors of summer vegetables without the addition of zucchini. I love preparing this recipe because it is simple, tasty, and perfect to accompany grilled dishes or simply enjoyed with fresh bread. The colorful peppers and melting eggplant, stewed in a tomato sauce flavored with garlic and herbs, offer an explosion of Mediterranean tastes. Ingredients (14 ingredients)

  • 3 c. à soupe olive oil
  • 2 c. à soupe tomato concentrate
  • oil for frying
  • paprika
  • Salt
  • Pepper
  • 2 clove garlic
  • parsley
  • 0.5 piece green pepper
  • 0.5 piece red pepper
  • 0.5 piece orange pepper
  • 0.5 piece yellow pepper
  • 1 piece onion
  • 1 piece eggplant

Preparation (6 steps)

Preparation of vegetables

Cut the peeled eggplant into slices. Fry the eggplant slices in frying oil until golden brown. Set aside. Cut the peppers (green, red, orange, yellow) into cubes. Fry the pepper cubes in frying oil until they are slightly tender. Set aside.

Chop the onion and garlic

Thermomix® Setting

Put the onion in the Thermomix bowl and chop 3 Sec./Level 5. Add the garlic cloves and chop 3 Sec./Level 7.

Sauté the onion and garlic

Thermomix® Setting

Add the olive oil to the bowl and sauté the onion and garlic 3 Min./120°C/Level 1.

Add the vegetables and tomato concentrate

Add the previously crushed eggplant, fried peppers and tomato concentrate to the bowl. Mix gently with the spatula.

Heat the dish

Thermomix® Setting

Heat everything 5 Min./100°C/Level 2.

Season and serve

Remove the bowl from the Thermomix. Off the heat, add salt, pepper, paprika and chopped parsley. Mix gently and serve hot.
