Description

This recipe for stuffed vegetables is a real treat! The combination of peppers and zucchini, filled with a hearty quinoa-feta mixture, is simply unbeatable. I like to make this dish in the summer when the vegetables are particularly aromatic. The preparation is a bit more elaborate, but it's definitely worth it! The filling can also be varied - try adding olives or sun-dried tomatoes. A great vegetarian dish that will also win over meat lovers.

Ingredients (13 ingredients)

  • 100 g Quinoa Tricolor
  • 2 piece Zucchini
  • to taste Sea salt
  • to taste Pepper
  • 1 piece Onion
  • 400 g Champignons
  • 2 clove Garlic
  • 1 bunch Rosemary
  • 1 bunch Thyme
  • 1 bunch Basil
  • 3 tbsp Olive oil
  • 200 g Feta
  • 2 piece Eggs

Preparation (8 steps)

Cook quinoa

Thermomix® Setting
15 min/212°F/Speed 1 100

Place 100 g quinoa in the mixing bowl and rinse with hot water. Then add 450 ml of hot water and a pinch of sea salt. Simmer for 15 min./100°C/speed 1 without a measuring cup.

Prepare vegetables

Preheat the oven to 200°C top/bottom heat. Wash 2 zucchini and peppers. Cut off the lid of the pepper and halve the zucchini lengthwise. Scrape out the core of the zucchini halves with a small teaspoon and knock out the seeds of the pepper. Season the prepared vegetables with sea salt and pepper.

Chop onion

Peel, quarter and place 1 onion in the mixing bowl. Chop for 3 sec./speed 5.

Chop mushrooms

Thermomix® Setting

Cut 400 g mushrooms into cubes and place in the mixing bowl. Chop for 5 sec./speed 4.

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Peel 2 cloves of garlic, place in the mixing bowl and chop for 3 sec./speed 7.

Sauté vegetables

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 3 tbsp olive oil, the chopped onion, mushrooms and garlic to the mixing bowl and sauté for 5 min./120°C/speed 1.

Prepare filling

Pour the fried mushroom cubes into a bowl and let cool slightly. Now add 200 g crumbled feta, 2 eggs, the cooked quinoa, rosemary, thyme and basil, season everything with salt and pepper and mix well.

Fill and bake vegetables

Fill the mixture into the vegetables and close the peppers with the lid. Bake everything in the preheated oven for about 35 minutes.
