Description

This hearty bacon dumpling soup is a savory main course, ideal for the cold season. The soup is prepared with lean beef, marrow bones, and fresh vegetables. The bacon dumplings are made from white bread, bacon, onions, and herbs and cooked in the soup. The preparation time is about 2.5 hours and serves 8.

Ingredients (22 ingredients)

  • 600 g lean beef (brisket, shoulder, or shank)
  • 300 g beef marrow bones
  • 3 l cold water
  • 1 Stück carrot
  • 0.5 Stück tomato
  • 50 g celery stalk
  • 50 g leek (1 small stalk)
  • 20 g parsley stems
  • 1 Stück onion with skin, browned
  • 0.5 Stück bay leaf
  • 4 Stück peppercorns, crushed
  • salt
  • 150 g firm white bread or dumpling bread
  • 50 g onions, finely diced
  • 20 g butter
  • 40 g flour
  • 120 g bacon, finely diced
  • 100 ml water or milk
  • 2 Stück eggs
  • 1 EL parsley or chives, finely chopped
  • salt
  • 1 EL chives, finely chopped

Preparation (11 steps)

Prepare the meat

Blanch 600 g lean beef and 300 g marrow bones in cold water and drain.

Cook the soup

Place the prepared meat in 3 l of cold water and slowly bring to a boil. Skim off foam and fat several times.

Add vegetables and finish cooking the soup

Let the soup cook for about 1 hour. Add 1 carrot, 1/2 tomato, 50 g celery stalk, 50 g leek, 20 g parsley stems, and 1 browned onion. Season with 1/2 bay leaf, 4 crushed peppercorns, and salt, and simmer gently for about another hour.

Strain the soup

Strain the soup through a cloth and degrease.

Prepare white bread

Cut 150 g of firm white bread or dumpling bread into small cubes.

Sauté the onions

Thermomix® Setting

Finely dice 50 g of onions, place in the mixing bowl and chop for 3 sec/speed 5. Add 20 g of butter and sauté for 3 min/120°C/speed 1.

Mix bread and bacon

Add the sautéed diced onions to the cut white bread. Mix in 40 g flour and 120 g bacon, finely diced.

Add liquid

Whisk together 100 ml water or milk, 2 eggs, 1 tbsp parsley or chives, finely chopped, and salt, pour over the bread and mix well.

Let the mixture rest

Let the mixture rest for about 15 minutes.

Form and simmer dumplings

With wet hands, form dumplings and simmer in salted water, partially covered, for 15 minutes.

Serve

Serve the bacon dumplings in the hot meat soup and sprinkled with 1 tbsp chives.
