Description

This creamy lentil coconut soup is a real comfort food! The combination of red lentils, coconut milk and aromatic spices such as chili and turmeric warms you from the inside and tastes simply heavenly. I especially like to make it in autumn and winter when it's cold outside. It is super quick to prepare and is perfect for a quick lunch or dinner. If you like it a little spicier, you can add a little more chili powder. And the best thing: it's also vegan!

Ingredients (9 ingredients)

  • 400 g Pizza tomatoes
  • 400 g Coconut milk
  • 1 piece Onion(s)
  • 175 g Lentils, red
  • 3 tsp Chili powder
  • 2 tsp Turmeric powder
  • 600 ml Vegetable broth
  • Oil
  • Salt

Preparation (4 steps)

Chop onions

Peel and quarter an onion and put it in the mixing bowl. Chop for 3 seconds/speed 5.

Sauté onions

Add a dash of oil to the onions in the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Cook soup

20 min/212°F/Speed 1 100

Add 400 g pizza tomatoes (canned), 400 g coconut milk (canned), 175 g red lentils and 600 ml vegetable stock to the mixing bowl and cook for 20 minutes/100°C/speed 1.

10 sec/Speed 3

Add 3 tsp chili powder, 2 tsp turmeric powder and salt to taste to the mixing bowl and stir for 10 seconds/speed 3.
