Description

This Japanese-style white cabbage salad is a refreshing and flavorful delight. I often prepare it to accompany Asian dishes or simply as a light starter. The white cabbage, marinated in a sweet and sour vinaigrette made with rice vinegar, brown sugar, mirin and soy sauce, becomes incredibly tender and tasty. Sesame seeds add a crunchy and fragrant touch. It's a simple and quick recipe to make, perfect for a light meal or a picnic. The marinade can be prepared in advance, making it an ideal dish for busy days. A real treat!

Ingredients (9 ingredients)

  • 0.5 piece white cabbage
  • Sesame seeds
  • 15 cl rice vinegar
  • 3 c. à s. brown sugar
  • 3 c. à s. rice vinegar
  • 3 c. à s. olive oil
  • 2 c. à s. mirin
  • 1 c. à s. nuoc-mâm
  • 1 c. à c. soy sauce

Preparation of the cabbage

Remove the first layer of leaves from the white cabbage, the ones that are a little green. Cut the cabbage in half and remove the slightly hard base.

Thinly slice the cabbage

Cut the half cabbage into pieces and put them in the Thermomix bowl. Chop the cabbage for 5 Sek./Stufe 4.

Preparation of the marinade

In the Thermomix bowl, mix 15 cl of rice vinegar, 3 tbsp of brown sugar, 3 tbsp of rice vinegar, 3 tbsp of olive oil, 2 tbsp of mirin, 1 tbsp of nuoc-mâm and 1 tsp of soy sauce. Mix for 10 Sek./Stufe 3.

Marinate the cabbage

Pour the marinade over the chopped cabbage in a salad bowl. Mix well and let marinate for at least 30 minutes.

Drain and rinse the cabbage

Drain the marinated cabbage and rinse it in cold water. Pat dry on paper towels.

Mix and serve

Pour the drained cabbage into a large bowl. Add half of the remaining sauce and mix gently. Serve the salad and add the sesame seeds.
