Description

This chicken curry wok recipe with coconut milk is an absolute must for all lovers of Asian cuisine! I have been making it for a while and it is always well received. The combination of tender chicken, creamy coconut milk and aromatic curry is simply unbeatable. It is super quick to prepare and is perfect for a quick weekday dinner. It tastes particularly delicious sprinkled with fresh coriander and served with rice. A dish that is guaranteed to please everyone!

Ingredients (10 ingredients)

  • 300 g Chicken breast fillet
  • 1 can Peeled tomatoes
  • 1 Onion
  • 1 clove Garlic
  • 1 can Coconut milk
  • 3 tbsp Curry powder
  • 2 tbsp Olive oil
  • Fresh coriander
  • Salt
  • Pepper

Preparation (7 steps)

Chop onion and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Put 1 peeled and quartered onion in the mixing bowl. Chop for 3 sec./speed 5. Add 1 clove of garlic and chop for 3 sec./speed 7.

Sauté onion and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Fry chicken (NOT IN THERMOMIX!)

Cut 300 g chicken breast fillet into small cubes. Heat 2 tbsp olive oil in a pan and fry the chicken cubes in it for 3-4 minutes, stirring, until golden brown. Remove from the pan and set aside.

Add tomatoes

Add 1 can of peeled tomatoes with juice to the mixing bowl and simmer for 2 min./100°C/speed 1.

Add coconut milk and curry

Thermomix® Setting
5 min/212°F/Speed 1 100 Reverse

Add 1 can of coconut milk, 3 tbsp curry powder, salt and pepper and simmer for 5 min./100°C/speed 1 reverse rotation.

Add chicken and finish cooking

Thermomix® Setting
5 min/212°F/Speed 1 100 Reverse

Add the fried chicken cubes to the mixing bowl and cook for another 5 min./100°C/speed 1 reverse rotation until the sauce has thickened slightly.

Serve

Chop fresh coriander and sprinkle over the dish. Serve immediately.
