Description

This lime chicken soup is a true taste experience! The combination of the acidity of the limes, the spiciness of the chilies and the fresh coriander makes it a special dish. I especially like to make it when it's cold outside, because it warms you from the inside and simply tastes delicious. The crispy tortilla strips give the soup an extra crunch. If you don't like it so spicy, you can of course reduce the chilies or leave them out altogether. An absolute favorite recipe that is quick to prepare and always goes down well!

Ingredients (11 ingredients)

  • 2 piece Lime(s)
  • 8 piece Tortilla(s)
  • 1 piece Chicken breasts
  • 4 Tasse/n Chicken broth
  • 4 piece Large tomato(es)
  • 1 piece Onion(s)
  • 2 piece Chili pepper(s) fresh green
  • 2 Zweig/e Coriander fresh
  • 1 etwas Oil
  • 1 etwas Salt
  • 1 etwas Pepper

Preparation (8 steps)

Chop onion

Put 1 onion in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onion

Add some oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add tomatoes and chili

Thermomix® Setting
3 min/212°F/Speed 1 100

Add 4 large tomatoes, diced, and 2 fresh green chili peppers, finely diced, to the onions in the mixing bowl and sauté for 3 min./100°C/speed 1.

Fry chicken breast

Fry 1 diced chicken breast in a pan with some oil and set aside.

Simmer soup

20 min/212°F/Speed 1 100

Add the fried meat, 4 cups of chicken broth, the juice of 2 limes and 2 sprigs of fresh coriander, chopped, to the ingredients in the mixing bowl and simmer for 20 min./100°C/speed 1.

Season soup

Season the soup with salt and pepper and add some lime juice if necessary. 1 min./speed 1/no temperature.

Fry tortillas

Cut 8 tortillas into bite-sized pieces and fry in hot oil in a pan until lightly browned. Drain on kitchen paper.

Serve

Pour the finished soup into plates and add a small handful of tortilla pieces to the soup just before serving. Sprinkle with some coriander as desired.
