Description

This Thai-style chili sauce is a real all-rounder! I especially like to make it when I'm grilling poultry, because it's great as a marinade. The fresh chilies provide a pleasant spiciness, which is perfectly balanced by the sweetness of the sugar and the acidity of the vinegar. The ginger gives the sauce a special touch. It is quick to prepare and tastes simply delicious with grilled food, spring rolls or as a dip for vegetables.

Ingredients (6 ingredients)

  • 5 piece Thai chili peppers fresh red, medium hot
  • 3 clove Garlic clove(s)
  • 30 g Ginger root fresh
  • 100 g Sugar
  • 3 tbsp Vinegar light
  • 2 tsp Cornstarch

Prepare chilies, garlic and ginger

Wash 5 Thai chili peppers, quarter lengthwise and add to the mixing bowl with the seeds. Add 3 garlic cloves and 30 g ginger root and chop for 5 sec./speed 5.

Add 100 g sugar to the mixing bowl and caramelize for 3 min./120°C/speed 1.

Sauté chili-garlic mixture

Thermomix® Setting
5 min/248°F/Speed 1 120

Add the chopped chili-garlic-ginger mixture and sauté for 5 min./120°C/speed 1.

Cook sauce

Thermomix® Setting
3 min/212°F/Speed 2 100

Add 1/4 l water, 3 tbsp vinegar and 2 tsp cornstarch to the mixing bowl and cook for 3 min./100°C/speed 2.

Season the sauce with salt and let it cool.
