Description

This vegetarian tomato soup, inspired by Yotam Ottolenghi, is an aromatic and easy dish prepared with the Thermomix®. The soup is ready in about an hour and is ideal as a starter or light main course. It is rich in tomatoes and vegetables and can be refined with yogurt or crème fraîche as desired. Perfect for a cozy evening or as meal prep for the week.

Ingredients (11 ingredients)

  • 250 g Onions
  • 2 piece Garlic cloves
  • 4 tbsp Olive oil
  • 2 tbsp Tomato paste
  • 1000 g Chopped tomatoes (canned)
  • 1.5 l Vegetable broth
  • 1 tsp Sugar
  • 1 tsp Salt
  • 0.5 tsp Freshly ground black pepper
  • 1 piece Celery stalk
  • 1 Handvoll Fresh basil

Preparation (7 steps)

Chop onions and garlic

Place 250g of onions in the mixing bowl and chop for 3 sec./speed 5. Then add 2 cloves of garlic and chop for 3 sec./speed 7.

Sauté onions and garlic

Add 4 tbsp of olive oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and roast tomato paste

Add 2 tbsp of tomato paste and sauté for 2 min./120°C/speed 1.

Add remaining ingredients and cook

Add 1 kg of chopped tomatoes (canned), 1.5 l of vegetable broth, 1 tsp of sugar, 1 tsp of salt, 1/2 tsp of freshly ground black pepper and 1 stalk of celery (in pieces) to the mixing bowl and cook for 40 min./100°C/speed 1. Leave the measuring cup on.

Puree soup

Puree the soup for 1 min./speed 10. Hold the lid firmly!

Add basil and mix

5 sec/Speed 4 Reverse

Add a handful of fresh basil and stir in for 5 sec./speed 4/Reverse.

Serve

Serve the soup hot. Garnish with a dollop of yogurt or crème fraîche and a basil leaf, if desired.
