Description

These mini venison burgers are a real eye-catcher and taste simply delicious! The tender venison harmonizes perfectly with the crisp asparagus and fresh nasturtium. The homemade vinaigrette with lemon and honey rounds off the taste experience. I like to make these burgers for special occasions or as sophisticated finger food for parties. The preparation is a bit more complex, but it's worth it! If you like, you can use deer or wild boar instead of venison. An absolute highlight for all gourmets!

Ingredients (13 ingredients)

  • 400 Gramm Venison loin
  • 1 Bündel green asparagus
  • 1 x organic lemon
  • 1 Packung Mozzarella di Bufala Campana
  • 1 Stück clarified butter
  • 1 Schuss sunflower oil
  • 1 Bündel nasturtium
  • 1 Bündel red cabbage sprouts
  • 1 Teelöffel mustard, medium hot
  • 1 Teelöffel forest honey, liquid
  • 150 Milliliter olive oil
  • 1 Stück butter
  • 1 x salt, pepper, sugar

Prepare vinaigrette

Thermomix® Setting
20 sec/Speed 3

Put 150 ml olive oil, the zest of half a lemon, 1 tbsp lemon juice, 1 tsp medium-hot mustard and 1 tsp liquid forest honey into the mixing bowl and mix for 20 sec./speed 3. Season with salt and pepper and transfer.
