Description

This braised carrot vegetable is a real all-rounder and super quick to prepare! I often make it as a side dish to meat dishes or just like that when I need to be quick. The sweetness of the carrots harmonizes wonderfully with the creamy cream and the touch of sugar. Thanks to the preparation in the Thermomix®, the vegetables are cooked in no time and the flavors combine perfectly. A great dish for the whole family that even beginner cooks can make. If you like, you can add fresh herbs such as parsley or chives.

  • 800 g Carrots
  • 2 tbsp Oil
  • 1 tsp Sugar
  • 0.25 Liter Vegetable broth
  • 2 tsp Salt and pepper
  • 100 g sweet Cream

Prepare carrots

Wash, clean and slice the carrots.

Sauté carrots

Put 2 tbsp of oil in the mixing bowl and heat for 3 min./120°C/speed 1. Add the carrot slices and 1 tsp of sugar and sauté for 3 min./120°C/speed 1 while stirring.

Add 0.25 liters of vegetable broth, 2 tsp of salt and pepper to the carrots in the mixing bowl and cook for 5 min./100°C/speed 1.

Refine and thicken the vegetables

Add 100 g of sweet cream to the mixing bowl and stir in for 2 min./90°C/speed 1 until the vegetables thicken slightly.

About this recipe

This recipe for braised carrot vegetables is one that I have refined over the years. It started as a simple side dish to encourage children to eat vegetables and has evolved into a dish that I really enjoy myself. I still remember how my grandma used to braise carrots from her own garden, but without a Thermomix®. This recipe is a tribute to her simple, honest cooking, modernized with the possibilities available to us today. The main ingredient, the carrot, of course plays the central role. We use 800 grams here, preferably fresh, crunchy carrots. They bring a natural sweetness and a pleasant texture to the dish. It is important that the carrots are not cut too thick, otherwise they will take longer to cook. Slices about 0.5 cm thick are ideal. The oil, ideally a neutral vegetable oil such as sunflower oil, is used to sauté the carrots and release their flavors. The sugar, just a teaspoon, enhances the natural sweetness of the carrots and ensures slight caramelization when sautéing. The vegetable broth provides the necessary liquid for cooking and gives the vegetables a savory note. Salt and pepper are of course essential to round off the taste. The cream, with 100 grams, ensures the creaminess and combines all the flavors. Make sure to use sweet cream, not sour cream or crème fraîche, as these would change the taste. When preparing in the Thermomix®, it is important to keep an eye on the temperature and stirring speed. The 120°C when sautéing is ideal for lightly frying the carrots without burning them. Stirring speed 1 ensures that the carrots are fried evenly. When cooking with the vegetable broth, a temperature of 100°C is sufficient to cook the carrots until soft without them falling apart. Stirring speed 1 also prevents the carrots from sticking to the bottom of the mixing bowl here. When refining with the cream, it is important to lower the temperature to 90°C, otherwise the cream may curdle. This recipe can be varied wonderfully. For a vegetarian or vegan version, you can replace the cream with a plant-based cream alternative such as soy, oat or cashew cream. To give the dish a special touch, you can add various spices. Curry powder, ginger or garlic go perfectly with carrots. Fresh herbs such as parsley, chives or dill can also refine the dish. Braised carrot vegetables are a versatile side dish that goes well with many dishes. It tastes great with meat dishes such as roasts, schnitzel or poultry. But it is also a delicious addition to fish or vegetarian dishes such as potato pancakes or tofu. Potatoes, rice or pasta are suitable as side dishes. The carrot vegetables can be prepared and stored well. It can be kept in the refrigerator for 2-3 days without any problems. You can also freeze it well. To heat it up, you can either heat it in the microwave or in a pot on the stove. If you want to prepare the vegetables, you can clean and cut the carrots the day before. This saves time when preparing.
