Description

This chicken spring onion pan with apricots is a quick and easy main course with an Asian touch. The dish is prepared in about 30 minutes and is ideal for a quick lunch or dinner. The combination of chicken, spring onions and apricots ensures an interesting variety of flavors. Perfect for student cuisine or when you need something quick.

Ingredients (10 ingredients)

  • 500 g Chicken fillet
  • 200 g Spring onions
  • 125 g Dried apricots
  • 2 EL Oil
  • Salt
  • 0.5 TL Chili flakes
  • 200 ml Apple juice
  • 8 EL Soy sauce
  • 2 Packungen Express Basmati rice
  • Pepper

Preparation (6 steps)

Preparation of the ingredients

Pat the chicken fillet dry and cut into slices. Clean, wash, drain and cut the spring onions into oblique pieces/rolls. Quarter the apricots.

Fry the chicken

Heat 2-3 tbsp of oil in a large pan. Fry the chicken slices in it for 3-4 minutes, turning occasionally. Remove from the pan and set aside.

Chop spring onions

Put 1 bunch (approx. 200 g) of spring onions into the mixing bowl and attach the Wundermix WunderSlicer V2. Select the fine slice and chop the spring onions. Collect the cut material.

Sautéing the spring onions and apricots

Add the chopped spring onions and 125 g dried apricots to the mixing bowl and sauté for 3 min./120°C/speed 1.

Seasoning and simmering

2-3 Minuten/212°F/Speed 1 212°F

Add the fried chicken slices, salt and 1/2-1 tsp chili flakes to the spring onions and apricots in the mixing bowl. Pour in 200 ml apple juice and 6 tbsp soy sauce, bring to the boil and simmer for 2-3 minutes/100°C/speed 1.

Prepare and mix in the rice

Prepare 2 packs (à 250 g) of Express Basmati rice according to the package instructions in 2-3 minutes and stir into the chicken spring onion pan. Season with 2–4 tbsp soy sauce and possibly some pepper.
