Description

These courgette fritters with herb curd are a delicious and complete meal. The recipe is vegetarian and rich in vegetables. The preparation is quick and easy, ideal for a light lunch or dinner. The fritters are rich in fiber and the dish is very filling.

Ingredients (13 ingredients)

  • 300 g Courgette
  • 300 g Carrots
  • 2 Stück Eggs
  • 1 EL Fine oat flakes
  • 2 EL Chopped parsley
  • 1 EL Lemon juice
  • Salt
  • Pepper, freshly ground
  • 2 EL Oil
  • 250 g Curd (20%)
  • 4 EL Milk
  • 4 EL Chopped herbs
  • 1 TL Lemon juice

Preparation (4 steps)

Prepare courgette and carrots

Wash, clean and coarsely grate the courgette and carrots on a vegetable grater.

Mix vegetables

Put the grated vegetables with 2 eggs, 1 tbsp fine oat flakes, 2 tbsp chopped parsley and 1 tbsp lemon juice in a bowl. Season with salt and pepper and mix thoroughly.

Fry fritters

Heat some oil in a coated pan. Add 1 tbsp of vegetable mixture per fritter to the pan, flatten slightly and fry until crispy on both sides. Bake more fritters with the remaining oil and vegetable mixture.

Prepare herb curd

For the herb curd, put 250 g curd (20%), 4 tbsp milk and 4 tbsp chopped herbs and 1 tsp lemon juice in a bowl and stir until smooth.
