Description

This hearty vegetable soup with sausages from the Thermomix® warms you up on cold days. Kohlrabi, carrots, onions, cauliflower and leek form the basis for this hearty main course. Preparation with the Thermomix® takes about 65 minutes, of which 30 minutes are active working time. The recipe is ideal for family cooking and yields 6 servings.

Ingredients (10 ingredients)

  • 600 g Kohlrabi
  • 1 Stück Carrot
  • 1 Stück Onion
  • 500 g Cauliflower
  • 1 Stück Leek
  • 600 g Sausages
  • Bay leaves
  • Butter for frying
  • 1 l Vegetable broth
  • Spices as desired

Preparation (6 steps)

Prepare vegetables

Cut kohlrabi, carrot and onion into cubes. Separate the cauliflower florets from the stem and cut into bite-sized pieces. Cut the leek into slices. Prepare vegetable broth according to package directions and have it ready next to the pot.

Melt butter and sauté vegetables

Put the butter in the mixing bowl and melt for 3 min./120°C/speed 1. Add the prepared vegetables to the mixing bowl and sauté for 6-7 min./120°C/speed 1.

Let the soup simmer

Deglaze the vegetables with the vegetable broth and add the water and bay leaves. Reduce the heat to medium heat and let everything simmer with the lid tilted for approx. 20 minutes/100°C/speed 1.

Prepare sausages

While the soup is simmering, cut the sausages into slices and set aside.

Puree soup (optional)

(Optional) If the soup is to become creamy, the following step is recommended: Remove the bay leaves from the soup and then scoop about 300-500ml of the soup into a tall container. Puree the vegetables with a hand blender and then return to the soup.

Finish soup

After the 20 minutes, add the sausages and spices and let everything simmer again for 10 minutes/100°C/speed 1.
