Descripción

This Georgian cheese bread, known as Khachapuri, is a delightful and comforting dish perfect for sharing. The warm, cheesy filling nestled in a soft, slightly tangy dough is simply irresistible. I've been making this recipe for years, and it's always a hit at gatherings. The dough requires some rising time, but the Thermomix® makes the process so much easier! It's best served warm, straight from the oven, and is ideal for brunch or as a hearty appetizer. Feel free to adjust the amount of cheese to your liking – I sometimes add a little feta for extra flavor!

  • 4 cups all-purpose flour, divided
  • 4.5 teaspoons active dry yeast
  • 3.5 teaspoons white sugar
  • 2 teaspoons salt
  • 1 taza milk
  • 0.5 taza margarine
  • 1 pounds shredded cheese, or more to taste
  • 1 egg egg
  • 1 egg egg, separated

Combine dry ingredients

Add 2 cups of all-purpose flour, 4 ½ teaspoons of active dry yeast, 3 ½ teaspoons of white sugar, and 2 teaspoons of salt to the Thermomix bowl. Mix for 10 Sec./Stufe 3 to combine.

Warm milk and margarine

Combine 1 cup of milk and ½ cup of margarine in the Thermomix bowl. Heat for 5 Min./50°C/Stufe 2 until the margarine is mostly melted and the milk is warm.

Combine wet and dry ingredients

Pour the milk mixture into the flour mixture in the Thermomix bowl. Mix for 30 Sek./Stufe 3 until just combined. Add the remaining 2 cups of flour and knead for 2 Min./Knetstufe until a soft dough forms.

Knead the dough

First rise

Transfer the dough to a greased bowl, turning to coat. Cover and let rise in a warm place until doubled in size, about 1 hour. This step is done outside the Thermomix.

Deflate and second rise

Gently punch down the dough to deflate. Let rise again until doubled, about 45 minutes. This step is done outside the Thermomix.

Preheat oven

Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch round baking pan. This step is done outside the Thermomix.

Shape the dough

Gently punch down the dough and roll into a circular shape. Transfer to the greased baking pan. This step is done outside the Thermomix.

Prepare cheese filling

Add 1 pound of shredded cheese, 1 egg, and 1 egg yolk to the Thermomix bowl. Mix for 15 Sek./Stufe 3 until well combined.

Assemble the Khachapuri

Spread the cheese mixture over the dough in the baking pan. Gather up the dough in 1 1/2-inch pleats. Squeeze pleats together gently and twist to make a topknot. This step is done outside the Thermomix.

Final rest and egg wash

Let the dough rest for 10 to 15 minutes. Brush with the separated egg white. This step is done outside the Thermomix.

Bake

Bake in the preheated oven for 1 hour, or until golden brown. This step is done outside the Thermomix.
