Description

This recipe for Spaghetti Carbonara is a classic Italian dish prepared with few ingredients. The combination of Guanciale, eggs, and Pecorino Romano results in a creamy and flavorful sauce. The preparation time is about 30 minutes, and the dish is ideal as a main course for pasta lovers.

Ingredients (6 ingredients)

  • 500 g Spaghetti
  • 187.5 g Guanciale
  • 5 Stück very fresh Eggs
  • 125 g freshly grated Pecorino romano
  • Salt
  • freshly ground Black pepper

Preparation (8 steps)

Cook spaghetti

Add 500 g of spaghetti to a pot with plenty of boiling salted water and cook al dente according to package directions. Meanwhile, proceed with the next step.

Prepare guanciale

Cut 187.5 g of guanciale into strips. Fry the guanciale in a separate pan without adding any fat until crispy. Set aside some of the fried guanciale for garnish.

Prepare Pecorino

Cut 125 g Pecorino romano into pieces and place in the mixing bowl. Place the WunderSlicer V2 on the mixing bowl lid and select the fine slice. Grate the Pecorino romano into the mixing bowl with the WunderSlicer V2 and then transfer.

Grind Pecorino

Put the grated Pecorino Romano into the mixing bowl and grind for 10 sec./speed 10.

Prepare egg mixture

Whisk 5 very fresh eggs in a bowl with half of the ground Pecorino romano, some salt, and freshly ground black pepper.

Mix pasta and guanciale

Lift the cooked spaghetti out of the cooking water with tongs and add it dripping wet to the fried guanciale in the pan. Add some cooking water if necessary and bring everything to a boil briefly.

Finish carbonara

Remove the pan from the heat and quickly stir the egg mixture into the pasta so that it does not curdle but settles around the pasta as a creamy sauce.

Serve

Distribute the pasta on plates, top with the reserved guanciale, sprinkle with the remaining Pecorino romano and serve immediately.
