Description

A classic and simple spaghetti carbonara recipe.

Ingredients (7 ingredients)

  • 100 g Bacon
  • 1 Stück Garlic clove
  • 80 g Parmesan
  • 25 g Butter
  • 350 g Spaghetti
  • 4 Stück Egg yolks
  • nach Geschmack Black pepper

Preparation (7 steps)

Prepare the cheese

Place Parmesan and Pecorino in pieces into the mixing bowl and finely grate for 15 sec/speed 10. Transfer and set aside.

Chop the garlic

Thermomix® Setting
3 sec/Speed 7

Peel the garlic clove, place it in the mixing bowl and chop for 3 sec/speed 7. Scrape down the sides with the spatula.

Fry bacon and garlic

Cut the bacon into small cubes. Add butter and bacon to a large pan. Add the chopped garlic and sauté over medium heat until the garlic turns brown. Remove the garlic from the pan and discard.

Cook spaghetti

Cook 350 g of spaghetti al dente in a separate pot with boiling salted water. When draining, collect some of the cooking water.

Prepare the egg-cheese mixture

Whisk the egg yolks in a bowl and mix with the grated cheese and some cooking water. Season with pepper.

Mix pasta with sauce

Add the drained spaghetti to the pan with the bacon. Remove the pan from the heat and let it cool for 2 minutes. Pour the egg-cheese mixture over the pasta and mix everything together. If necessary, loosen with some cooking water.

Serve

Serve the spaghetti carbonara immediately and sprinkle with freshly ground black pepper.
