Description

This pork tenderloin in mushroom sauce is a dish that I often prepare at home, especially when I want something comforting and tasty. The meat is very tender and the sauce, with its touch of white wine and fresh parsley, is simply delicious. It is ideal for a special dinner or even to celebrate Christmas. The preparation is quite simple and, with the Thermomix®, the time in the kitchen is further reduced. I hope you enjoy it as much as I do!

Ingredients (11 ingredients)

  • 1 kg pork tenderloin
  • 200 gr mushrooms
  • 100 ml white wine
  • 300 ml meat broth
  • 1 piece onion
  • 1 clove garlic
  • 1 cucharada flour
  • to taste salt
  • to taste pepper
  • Olive oil
  • 1 puñadito parsley

Preparation (8 steps)

Initial preparation of the tenderloin

Remove the fat from the pork tenderloin and cut it into slices approximately 2 cm thick. Season with salt and pepper to taste. Reserve.

Searing the tenderloin in a pan

In a frying pan with a little hot olive oil, sear the tenderloin medallions for 1 minute on each side. Remove and reserve.

Chopping onion and garlic

Place the peeled onion in quarters and the garlic clove in the Thermomix® bowl. Chop for 3 seconds at speed 5.

Sautéing onion and garlic

Add a little olive oil to the bowl. Program 3 minutes, temperature 120°C and speed 1 to sauté the onion and garlic.

Add the mushrooms

Add the sliced mushrooms to the bowl. Program 5 minutes, temperature 120°C, speed 1.

Add parsley and white wine

Thermomix® Setting
2 min/Varoma/Speed 1 Varoma

Add the chopped parsley and white wine to the bowl. Program 2 minutes, Varoma temperature, speed 1, without the beaker to favor the evaporation of the alcohol.

Add flour and broth

Thermomix® Setting
5 Seg./Speed 4

Add the flour and meat broth to the bowl. Program 5 seconds at speed 4 to mix well.

Cooking the sauce with the tenderloin

30 min/212°F/Velocidad cuchara 100 Reverse

Incorporate the seared tenderloin medallions into the bowl. Program 30 minutes, temperature 100°C, spoon speed, left turn.
