Description

This beef fillet with piquant flavors is a refined and colorful dish, perfect for a special occasion. The combination of tender beef with chorizo, piquillo peppers and sardines creates an amazing and delicious contrast of flavors. Ingredients (10 ingredients)

  • 10 cl veal juice
  • 12 morceaux bread cut into cubes
  • Salt
  • Pepper
  • 1 can sardines
  • 60 g celery root
  • 40 g chorizo
  • 60 g piquillo peppers
  • 1 échalote shallot
  • 800 g Bazas beef fillet

Preparation of celery root

Cut the celery root into 1 mm dice. Put the celery root cubes in the Thermomix bowl and sweat with a little butter for 5 Min./120°C/Stufe 1.

Preparation of sardines

Thermomix® Setting
5 sec/Speed 5

Coarsely chop two sardines, taking care to remove the central bone. Put the chopped sardines in the Thermomix bowl and chop 5 Sek./Stufe 5.

Preparation of the shallot and peppers

Slice the shallot into thin slices and cut the peppers into julienne. Set aside.

Preparation of veal juice

Thermomix® Setting
3 min/212°F/Speed 2 100

Put the veal juice in the Thermomix bowl and heat 3 Min./100°C/Stufe 2.
