Description

This onion focaccia is a real comfort food! The recipe is simple but the result is a rustic, fragrant and flavorful focaccia. Perfect for a tasty aperitif or as an accompaniment for a dinner with friends. The sweetness of the caramelized onions perfectly matches the soft and fragrant base. I prepare it often, especially in autumn, when the onions are at their best. A tip? Try adding black olives or fresh rosemary for an extra touch!

Ingredients (13 ingredients)

  • 500 g 00 flour
  • 9 g brewer's yeast
  • 2 cucchiaini sugar
  • 250 ml water
  • 2 tbsp extra virgin olive oil
  • 1 tsp fine salt
  • 3 piece medium onions
  • 3 tbsp tomato sauce
  • 200 ml water
  • oregano
  • extra virgin olive oil
  • pepper
  • fine salt

Dough preparation

In the Thermomix bowl, pour 500 g of 00 flour, 9 g of brewer's yeast, 2 teaspoons of sugar and 250 ml of water. Add 2 tablespoons of extra virgin olive oil. Set the dough function for 2 Min.

Adding salt and final dough

Add 1 teaspoon of fine salt to the dough in the bowl. Set the dough function again for 1 Min.

Dough leavening

Transfer the dough to a lightly oiled bowl, cover with plastic wrap and let rise in a warm place for about 2 hours, or until doubled in volume.

Preparation of the onions

In the Thermomix bowl, insert 3 medium onions cut into quarters and chop for 3 Sec./Stufe 5.

Cooking the onions

15 min/212°F/Speed 1 100

Add 200 ml of water, 3 tablespoons of tomato sauce, oregano to taste, fine salt to taste and pepper to taste to the chopped onions in the bowl. Cook for 15 Min./100°C/Stufe 1.

Assembly and baking of the focaccia

Roll out the leavened dough on an oiled baking sheet. Spread the cooked onions evenly over the surface. Season with a drizzle of extra virgin olive oil and bake in a preheated oven at 200°C for about 20-25 minutes, or until golden brown.
