Description

This fresh coleslaw with a creamy herb dressing is an absolute highlight! I especially like to make it in spring and summer when the white cabbage is nice and crunchy. The dressing made from spinach, basil, nuts and nutritional yeast gives the salad a great flavor and a pleasant creaminess. The salad is quick to prepare and is perfect as a side dish for grilling or as a light lunch. If you like, you can add some celery. A really tasty and healthy dish!

Ingredients (14 ingredients)

  • 0.5 piece White cabbage
  • 1 piece Cucumber
  • 1 Pck. Chives
  • 0.5 bunch Spring onions
  • 2 piece Lemons
  • 2 clove Garlic
  • 125 g Baby spinach
  • 1 Pck. Basil
  • 60 ml Olive oil
  • 2 tbsp Rice vinegar or Mirin
  • 70 g Nuts (walnuts or cashews)
  • 2.5 tbsp Nutritional yeast
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Prepare white cabbage

Thermomix® Setting
5 sec/Speed 5

Wash 0.5 white cabbage, remove the stalk and cut into coarse pieces. Place in the mixing bowl and chop for 5 sec./speed 5. Transfer.

Prepare cucumber

Thermomix® Setting
3 sec/Speed 4

Wash 1 cucumber, halve lengthwise, scrape out the seeds with a spoon and cut the pulp into coarse pieces. Place in the mixing bowl and chop for 3 sec./speed 4. Transfer.

Prepare chives and spring onions

Cut 1 pack of chives into rolls. Wash 0.5 bunch of spring onions and cut into fine rings. Add both to cabbage and cucumber in a large bowl and mix.

Prepare dressing

Thermomix® Setting
3 sec/Speed 7

Peel 2 cloves of garlic and place in the mixing bowl. Chop for 3 sec./speed 7. Push down with the spatula.

Complete dressing

30 sec/Speed 10

Halve 2 lemons and squeeze out the juice. Wash 125 g baby spinach and 1 pack of basil. Add lemon juice, spinach, basil, 60 ml olive oil, 2 tbsp rice vinegar, 2 tbsp water, 70 g nuts (walnuts or cashews), 2.5 tbsp nutritional yeast, salt and pepper to the mixing bowl and puree for 30 sec./speed 10.

Mix salad and dressing

Pour the dressing over the salad in the bowl and mix well. Season with salt and pepper.
