Description

This spinach and cheese omelette is a simple and delicious recipe, perfect for a quick lunch or a light dinner. The combination of fresh spinach with melted cheese is simply irresistible. I prepare it often because it is a great way to include vegetables in the diet in a tasty way. Also, it is done in the blink of an eye with the Thermomix®. It is ideal for those days when you don't have much time to cook, but you want to eat something nutritious and rich. Go ahead and try it, you will love it! You can use any type of cheese that melts well, such as gouda or emmental.

Ingredients (5 ingredients)

  • 300 gr Spinach
  • 4 piece Eggs
  • 2 clove Garlics
  • Oil
  • 100 gr Soft cheese

Preparation (8 steps)

Prepare the spinach

If the spinach is fresh, wash it well and cut it into smaller pieces. If you use frozen spinach, thaw it and drain it well to remove excess water.

Cook the spinach

Thermomix® Setting
4 min/Varoma/Velocidad 1 Varoma

Place the spinach in the Thermomix glass and program 4 Min./Varoma/Speed 1. Make sure the spinach is well cooked but not too soft.

Drain the spinach

Pour the cooked spinach into the Thermomix basket and press it with a spoon to remove as much water as possible. Reserve the drained spinach.

Chop the garlics

Insert the garlics into the Thermomix glass and program 3 Seg./Speed 7 to chop them finely. Lower the remains from the walls of the glass with the spatula.

Sauté the garlics and spinach

Thermomix® Setting
3 min/248°F/Velocidad 1 120

Add a splash of oil to the Thermomix glass along with the chopped garlics and program 3 Min./120°C/Speed 1. Then, add the drained spinach and program 2 Min./120°C/Speed 1 to sauté everything together.

Beat the eggs with the cheese

In a separate bowl, beat the eggs with the grated cheese. You can use a fork or a whisk to mix the ingredients well.

Incorporate the spinach into the eggs

Pour the spinach and garlic mixture over the beaten eggs with cheese. Mix gently to integrate all the ingredients evenly.

Set the omelette

Pour the mixture into a non-stick frying pan previously heated with a little oil. Cook over medium-low heat until the omelette is set on both sides. You can carefully turn it over using a plate or a spatula.
