Description

These vegetable fritters are a delicious and healthy option for a snack or a light dinner. I have been preparing this recipe for years and it is always a success at home. The combination of zucchini and carrot is perfect, but you can use the vegetables you like the most, such as broccoli, cauliflower or spinach. Chickpea flour gives it a special touch and makes them suitable for coeliacs. They are very easy to prepare and are ready in a short time. Ideal to take advantage of those vegetables that you have in the fridge! Also, they can be frozen to always have them on hand. Try them, you will love them!

Ingredients (8 ingredients)

  • 1 piece egg
  • 0.5 piece zucchini
  • 1 piece small carrot
  • 4 tbsp chickpea flour
  • 1 tsp baking powder
  • 1 pinch garlic powder
  • 0.5 tsp nutmeg
  • 0.5 tsp dehydrated basil

Preparation (4 steps)

Grate the vegetables

Wash and cut the zucchini into pieces. Peel and cut the carrot into pieces. Place the zucchini and carrot in the glass and grate for 5 Sec./Stufe 5. If necessary, repeat the process until the desired texture is obtained.

Mix the ingredients

Add the egg, garlic powder, dehydrated basil and nutmeg to the glass. Mix for 10 Sec./Stufe 3.

Incorporate the flour and baking powder

Thermomix® Setting
15 Seg./Speed 4

Add the chickpea flour and baking powder to the glass. Mix for 15 Sec./Stufe 4. Check the consistency of the dough. If necessary, add more chickpea flour until you get a thick dough.

Cook the fritters

Heat a pan with a tablespoon of oil over medium heat. With the help of two spoons, form the fritters and place them in the pan. Cook for 3 Min. on each side, or until golden brown.
