Description

This fusilli dish with summer vegetables is a real ray of sunshine on the plate! I love preparing this recipe when the cherry tomatoes are ripe and the aubergines are full of sunshine. It's a complete dish, perfect for lunch on the terrace or an impromptu picnic. The pasta is coated in a delicious fresh tomato sauce, flavored with basil, and the melting aubergine cubes add a gourmet touch. Mozzarella and ham add a note of freshness and flavor. A real treat, ready in less than 45 minutes! Feel free to add other seasonal vegetables such as zucchini or peppers.

Ingredients (8 ingredients)

  • 320 g fusilli
  • 2 piece aubergines
  • 500 g cherry tomatoes
  • 250 g mozzarella balls
  • 4 slice pork ham
  • 0.5 bunch fresh basil
  • 12 cl olive oil
  • 2 pinch fine salt

Preparation (10 steps)

Preparation of cherry tomatoes

Wash the cherry tomatoes and cut them in half. Place them in a large salad bowl.

Seasoning of tomatoes

Salt the cherry tomatoes, sprinkle with 4 cl of olive oil and add 6 chopped fresh basil leaves. Let stand.

Preparation of aubergines

Wash the aubergines, remove the ends and cut them into cubes.

Cooking the aubergines

Pour 8 cl of olive oil into a pan. Add the aubergine cubes, salt and add a few fresh basil leaves. Brown for 20 minutes over medium heat, until they are well colored and melting.

Cooling and mixing the aubergines

Remove from the heat and let the aubergine cubes cool in the pan. Then, pour them into the salad bowl with the cherry tomatoes.

Cooking the pasta

Pour 1 liter of water into the Thermomix bowl. Add a pinch of salt. Heat the water for 10 Min./100°C/Stufe 1.

Add the fusilli to the Thermomix bowl. Cook for 9 Min./100°C/Linkslauf Stufe 1.

Mixing pasta and vegetables

Drain the pasta and pour it into the salad bowl with the cherry tomatoes and the aubergine cubes. Mix gently.

Finalization of the dish

Add the well-drained mozzarella balls and the diced ham slices to the pasta. Mix gently again.

Decoration and serving

Decorate with a few basil leaves and serve immediately.
