Description

This Thermomix® recipe for orange shortcrust pastry cookies is a Christmas cookie classic. The main ingredients are organic orange, wheat flour, margarine and sugar. Preparation takes about 90 minutes and yields approximately 40 cookies. Ideal as finger food, dessert or for the festive coffee table in winter.

Ingredients (9 ingredients)

  • 1 piece Organic orange
  • 300 g Wheat flour Type 405
  • 200 g Margarine
  • 100 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 tsp Salt
  • 2 tbsp Icing sugar
  • Sugar pearls
  • 50 g Bittersweet chocolate

Preparation (11 steps)

Prepare orange

Wash the organic orange thoroughly. Grate the peel with a fine grater (approx. ½ tsp for the dough, set aside the rest for decoration). Halve the orange and squeeze out the juice. Measure out 2 tsp of orange juice for the icing, use the rest for other purposes.

Prepare dough

Put 300 g wheat flour type 405, 200 g margarine (in pieces), 100 g sugar, 1 pack. vanilla sugar, ½ tsp orange zest and 1 tsp salt into the mixing bowl.

Knead dough

Thermomix® Setting
2 min/Kneading speed

Knead all ingredients for 2 min./kneading level to a smooth dough. If necessary, use the spatula to push down from the edge.

Chill dough

Wrap the dough in cling film and refrigerate for 30 minutes.

Preheat oven and prepare baking sheet

Preheat the oven to 160 °C fan oven. Line a baking sheet with baking paper.

Cut out and bake cookies

Roll out the dough thinly on a lightly floured work surface and cut out desired shapes with cookie cutters. Place the cookies on the prepared baking sheet and bake for approx. 8 to 10 minutes until golden brown.

Let cookies cool

Let the baked cookies cool completely on a wire rack.

Prepare icing

Thermomix® Setting
10 sec/Speed 3

Put 2 tbsp icing sugar and 2 tsp orange juice into the mixing bowl and mix for 10 sec./speed 3.

Decorate cookies

Spread the icing on the cooled cookies. Sprinkle some cookies with the remaining orange zest or sugar pearls.

Melt chocolate

Thermomix® Setting
3 min/122°F/Speed 2 50

Put 50 g bittersweet chocolate in pieces into the mixing bowl and melt for 3 min./50°C/speed 2.

Decorate cookies with chocolate

Decorate the remaining cookies with the melted chocolate. Let the chocolate set.
