Description

This stracciatella ice cream with dark chocolate and pepper is a real explosion of flavors! I love preparing it for parties or birthdays because it is always very popular. The marriage of intense dark chocolate with the freshness of citrus zest and the spicy touch of black pepper is simply divine. The preparation is a bit long because of the cooling time, but the result is really worth it. You can vary the pleasures by using different types of chocolate or adding other spices. An original and refreshing dessert that will surprise your guests!

Ingredients (9 ingredients)

  • 125 g Dark chocolate
  • 2 piece Lime(s) zest
  • 1 piece Orange(s) zest
  • 4 c. à soupe Vodka
  • 2 c. à soupe Liqueur
  • 200 g Icing sugar
  • 600 ml Thick cream
  • Black pepper
  • 1 keine Natural orange flavoring

Preparation (9 steps)

Citrus zests and vodka

Thermomix® Setting
5 sec/Speed 7

In the Thermomix bowl, add the zest of 2 limes and one orange. Add half of the vodka (2 tbsp) and mix 5 Sec./Stufe 7.

Preparation of the lemon cream

Thermomix® Setting
30 sec/Speed 4

Add the lime juice, natural orange flavoring, half of the icing sugar (100 g) and the thick cream (600 ml) in the Thermomix bowl. Whisk 30 Sec./Stufe 4.

Adding the black pepper

Thermomix® Setting
5 sec/Speed 3

Add the black pepper (8 to 10 turns of the mill) in the Thermomix bowl and mix 5 Sec./Stufe 3.

Creation of the chocolate ribbons (first part)

Pour half of the cream-lemon mixture into an airtight plastic box. Melt the dark chocolate in a double boiler (without Thermomix). Take a tablespoon of melted chocolate, then, in a quick circular motion, pour it over the cream in thin ribbons. Wait a few seconds for the chocolate to harden.

Finalization of the first layer

Cover with the rest of the cream-lemon mixture and pour a tablespoon of chocolate over it again.

Preparation of the orange cream

Thermomix® Setting
30 sec/Speed 4

Clean the Thermomix bowl. Add the zest and orange juice, the rest of the vodka (2 tbsp), the rest of the natural orange flavoring, the rest of the icing sugar (100 g) and the thick cream (600 ml). Whisk 30 Sec./Stufe 4.

Incorporation of chocolate and pepper (second part)

Thermomix® Setting
10 sec/Speed 3

Incorporate the rest of the melted chocolate into the Thermomix bowl and add the black pepper (8 to 10 turns of the mill). Mix 10 Sec./Stufe 3.

Freezing

Pour into another airtight plastic box and place both boxes of cream in the freezer for at least 6 hours.

Service

Serve the ice creams together. When cutting, the chocolate ribbons of the Stracciatella ice cream will break to form small chocolate chips.
