Description

A festive coffee-flavored Bundt cake perfect for breakfast or dessert.

Ingredients (16 ingredients)

  • 220 g Butter (at room temperature)
  • 120 g Powdered sugar
  • 45 g Cornstarch
  • 1 Pck. Vanilla sugar
  • 1 Prise Salt
  • 0.5 Stück Zest of ½ organic lemon
  • 2 EL Orange juice
  • 5 Stück Egg yolk
  • 220 g Flour
  • 2 TL Baking powder
  • 125 ml Milk or cream
  • 60 g Raisins (soaked in orange juice)
  • 5 Stück Egg white
  • 100 g Sugar
  • Fat and flour for the pan
  • Powdered sugar for sprinkling

Preparation (10 steps)

Preheat oven

Preheat oven to 170 °C top/bottom heat.

Beat butter, powdered sugar, cornstarch, vanilla sugar, salt, lemon zest and orange juice until fluffy

Put 220 g butter (at room temperature), 120 g powdered sugar, 45 g cornstarch, 1 pack vanilla sugar, 1 pinch of salt, zest of ½ organic lemon and 2 tbsp orange juice into the mixing bowl and beat for 3 min/speed 4 until fluffy.

Stir in egg yolks

Gradually add 5 egg yolks and stir for 1 min/speed 3 until a creamy mass is formed.

Mix and sift flour and baking powder

Mix and sift 220 g flour and 2 tsp baking powder. Set aside.

Stir in half of the flour mixture and milk/cream

Add half of the flour mixture and 125 ml milk or cream to the mixing bowl and stir for 30 sec/speed 3.

Prepare raisins

Drain 60 g raisins, toss in flour and set aside.

Beat egg whites

Clean and dry the mixing bowl. Put 5 egg whites and 100 g sugar in the mixing bowl. Insert butterfly and whisk until stiff for 3 min/speed 3.5.

Fold in egg whites and remaining flour

Thermomix® Setting
30 sec/Linkslauf/Speed 2 Reverse

Alternately fold in egg whites and remaining flour mixture into the dough. Carefully fold in raisins.

Fill dough into pan and bake

Pour the dough into a greased, floured Bundt cake pan and bake for approx. 50–60 min.

Finish Bundt cake

Turn out the Bundt cake, let it cool and sprinkle with powdered sugar.
