Description

This meat stew with tomato, also known as tuco, is a classic to accompany pasta. I remember my grandmother always preparing it on Sundays, and the aroma flooded the whole house. The meat, tender and juicy, melts in your mouth, while the tomato sauce, rich and tasty, envelops each bite. It is a comforting dish, ideal for cold days. It can be prepared in advance and reheated, which makes it a perfect option for family meals. Go ahead and try it, you will love it! You can use different cuts of meat, such as flank or chuck, and add other vegetables, such as carrot or red pepper. Serve with your favorite pasta and grated cheese.

Ingredients (9 ingredients)

  • 500 gramos Shoulder
  • 500 centímetros cúbicos Canned plum tomatoes
  • 1 cucharada postre Paprika
  • 1 cucharada sopera Tomato extract
  • 1 piece Onion
  • 0.25 piece Bell pepper
  • 2 cucharadas soperas Flour
  • 1 hoja Bay leaf
  • 1 cucharada postre Ground chili

Chop the onion

Put the onion in the glass and chop 3 sec./Stufe 5. With the spatula, lower the remains of the walls of the glass.

Sauté the onion

Add a spoonful of oil to the glass and sauté 3 Min./120°C/Stufe 1.

Add the bell pepper and garlic (optional)

Add the bell pepper cut into small cubes and, if desired, a finely chopped garlic clove to the glass. Sauté 10 Min./120°C/Stufe 1.

Prepare the meat

Meanwhile, remove the visible fat from the meat and cut it into cubes of the same size. Arrange the flour on a plate and pass each cube of meat through it, as if you wanted to coat it.

Seal the meat

In a separate pan, seal the meat in batches with a little oil. Turn it so that all its faces are sealed, remove it and set it aside to seal the rest of the meat.

Incorporate the meat and the rest of the ingredients

Add the sealed meat to the glass, along with the sautéed vegetables, the canned plum tomatoes, the paprika, the tomato extract, the ground chili and the bay leaf. Stir well.

Cook the stew
