Description

This hearty vegetable casserole is an absolute comfort dish for cold days! I like to make it when I need something quick and still want something warm and hearty on the table. The frozen mixed vegetables are super practical and the grated cheese provides a nice crust. The preparation is very simple and the Thermomix® helps to mix the ingredients perfectly. An ideal dish for the whole family, which also works great as a leftover meal. If you like, you can add some nutmeg. Simple, tasty and warming - what more could you want?

Ingredients (6 ingredients)

  • 1000 g Mixed vegetables frozen
  • 300 g Grated Emmental 45% fat
  • 450 ml Low-fat UHT milk
  • 6 piece Eggs
  • Salt
  • Pepper

Preparation (5 steps)

Whisk milk and eggs

Put 450 ml low-fat UHT milk and 6 eggs into the mixing bowl and stir for 20 sec./speed 4.

Add salt and pepper to taste and stir for another 5 sec./speed 3.

Mix mixed vegetables and cheese

Put 1 kg mixed vegetables (frozen) and 300 g grated Emmental into a casserole dish and mix well.

Add egg-milk mixture

Pour the egg-milk mixture evenly over the mixed vegetables and cheese in the casserole dish.

Bake casserole

Bake the casserole in a preheated oven at 200°C circulating air for approx. 40 minutes until golden brown.
