Description

This homemade stew with chicken and chickpeas is a comforting and nutritious dish, perfect for cold winter days. The recipe is simple and uses basic ingredients that we usually have at home. The chicken broth, enriched with saffron, thyme and nutmeg, gives it a unique and delicious flavor. Chickpeas, carrots and green beans provide fiber and vitamins. This dish is ideal to share with family or friends, and can be prepared in advance. In addition, the leftover broth can be used to make a soup or rice. A complete and versatile dish that you will surely love!

Ingredients (12 ingredients)

  • Broth
  • 2 piece chicken thighs
  • 1 pinch saffron
  • 2 toques ground thyme
  • 1 toque nutmeg
  • 3 pizcas salt
  • 1 trozo knuckle (optional)
  • 1 hueso shank (optional)
  • 333 g chickpeas
  • 3 piece medium carrots
  • 350 g frozen green beans
  • 1 piece medium leek (optional)

Preparation (8 steps)

Prepare the chickpeas

If you use dried chickpeas, soak them the night before. If you use canned chickpeas, rinse them well before using.

Prepare the chicken broth

Place the chicken thighs in the Thermomix bowl. Add a pinch of saffron, two pinches of ground thyme, a pinch of nutmeg and three pinches of salt. Cover with water up to the maximum mark on the bowl.

Cook the chicken broth

Program the Thermomix to cook the broth: 30 Min./100°C/Stufe 1.

Add the vegetables

Add the medium carrots (3-4), the frozen green beans (350 g) and the medium leek (1) to the Thermomix bowl.

Cook the vegetables

Program the Thermomix to cook the vegetables: 20 Min./100°C/Stufe 1.

Add the chickpeas

Add the rinsed chickpeas (333 g) to the Thermomix bowl.

Finish cooking

Program the Thermomix to finish cooking: 30 Min./100°C/Stufe 1.

Serve

Separate the broth from the chickpeas and chicken. Serve the chickpeas with the chicken and vegetables with a ladle or two of broth.
