Description

This goat cheese salad is a poem! The combination of creamy goat cheese, crunchy nuts and fresh lamb's lettuce is simply unbeatable. The slightly sweet dressing with lavender honey rounds off the dish perfectly. I like to make this salad when I have guests because it is quick to prepare and always goes down well. The sweet potato chips provide an extra crunch. A great dish for a special occasion or just because!

Ingredients (11 ingredients)

  • 30 g Almonds, peeled
  • 30 g Walnuts
  • 30 g Pecans
  • 4 tbsp Olive oil
  • Salt
  • Pepper
  • 150 g Lamb's lettuce
  • 1 tbsp Lavender honey
  • 2 tbsp Light vinegar
  • 60 g Sweet potato chips
  • 8 piece Spicy goat

Preparation (5 steps)

Chop nuts

Thermomix® Setting

Place almonds, walnuts and pecans in the mixing bowl and chop for 5 sec./speed 5.

Roast nuts

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tbsp olive oil to the chopped nuts in the mixing bowl and roast for 3 min./120°C/speed 1. Season with salt and pepper and then transfer.

Prepare dressing

Thermomix® Setting
20 sec/Speed 3

Put lavender honey, vinegar and remaining olive oil in the mixing bowl. Season with salt and pepper and stir for 20 sec./speed 3.

Arrange salad

Clean, wash and shake dry the lamb's lettuce. Pour the dressing over the lamb's lettuce. Add nuts and sweet potato chips and mix carefully.

Fry goat cheese

Briefly fry the goat cheese patties on both sides in a pan according to the package instructions. Arrange the salad and add the fried goat cheese.
