Description

This summery pasta salad with vegetables and salami is a hearty main course or a delicious appetizer, prepared in the Thermomix®. The main ingredients are whole wheat spaghetti, cucumber, cherry tomatoes and salami. In about 55 minutes, including 25 minutes of work, a portion for 4 people is created. Ideal for parties, as a quick lunch or for anyone looking for a simple and filling meal.

Ingredients (17 ingredients)

  • 300 g Spaghetti (whole wheat)
  • 1 Stück Cucumber
  • 200 g Cherry tomatoes
  • 100 g Salami
  • 0.5 Stück red Onion
  • 100 g black Olives
  • 100 g grilled Peppers (glass)
  • 125 g Mozzarella
  • 1 Bund fresh Parsley
  • 6 EL Olive oil
  • 3 EL White wine vinegar
  • 10 g grated Parmesan
  • 1 TL Honey
  • 1 Zehe Garlic
  • 1 TL Italian herbs
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (5 steps)

Cook spaghetti

Add 300 g spaghetti (whole wheat) to a pot and prepare according to package instructions. In the meantime, continue with the next steps.

Chop garlic

Put 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Prepare dressing

Add 6 tbsp olive oil, 3 tbsp white wine vinegar, 10 g grated Parmesan, 1 tsp honey, 1 tsp Italian herbs, salt and pepper to the chopped garlic in the mixing bowl and stir for 10 sec./speed 3.

Prepare vegetables

Cut 1 cucumber into cubes, halve 200 g cherry tomatoes, cut 100 g salami into thin slices, finely dice 1/2 red onion, cut 100 g black olives into slices and cut 100 g grilled peppers (from a jar) into strips. Dice 125 g mozzarella and chop fresh parsley.

Mix salad

Put the cooked spaghetti (cooled), the prepared salad ingredients (cucumber, tomatoes, salami, onion, olives, peppers, mozzarella and parsley) in a large bowl. Pour the dressing from the mixing bowl over it and mix everything well. Let the salad sit for 30 minutes.
