Ingredients (8 ingredients)

  • 3 cups all-purpose flour
  • 5 tablespoons seasoned salt
  • 3 tablespoons garlic powder
  • salt

  • 4 piece large eggs, beaten
  • 2 piece whole chickens, cut into pieces (2 to 3 pound each)
  • 1 quart vegetable oil for frying

Preparation (6 steps)

Prepare the flour mixture

In a shallow plate or bowl, combine 3 cups all-purpose flour, 5 tablespoons seasoned salt, 3 tablespoons garlic powder, salt, and pepper to taste. Mix well and set aside.

Prepare the egg wash

In a separate shallow bowl, beat 4 large eggs until well combined. Set aside.

Coat the chicken

Roll or shake each chicken piece in the flour mixture, ensuring it is fully coated. Place the coated chicken pieces on a platter. Then, dip each chicken piece in the egg wash and roll again in the flour mixture to create a double coating.

Heat the oil

Heat 1 quart vegetable oil in a deep-fryer or large skillet to 190°C (375 degrees F). Ensure the oil is hot enough before adding the chicken.

Fry the chicken

Carefully place the coated chicken pieces in the hot oil, ensuring not to overcrowd the fryer or skillet. Fry for about 5 minutes on each side until golden brown. Cover the skillet and cook on lower heat for about 10 minutes. Remove the cover, turn up the heat, and fry for 5 minutes on each side to make the chicken crispy. Chicken is done when it is no longer pink inside and its juices run clear. An instant-read thermometer inserted near the bone should read 74°C (165 degrees F).

Drain and keep warm

Remove the fried chicken pieces from the oil and drain on paper towels to remove excess oil. Keep the fried chicken warm in an oven until ready to serve.
