Description

This quinoa paella is a delicious and healthy alternative to traditional paella. Quinoa, rich in protein and fibre, replaces rice, offering a similar texture and a flavour that combines perfectly with fresh seafood. Preparing this dish in the Thermomix® makes the process much easier, ensuring even cooking and a spectacular result. Ideal for a family meal or a special dinner, this paella is an explosion of Mediterranean flavours. I often prepare it in spring, when peas are at their best. A dish that always triumphs!

Ingredients (18 ingredients)

  • 350 g Quinoa
  • 1 piece Spring onion
  • 1 clove Garlic
  • 50 g Natural chopped tomato
  • 1 piece Small red pepper
  • 4 piece Flat green beans
  • 1 puñado Peas
  • 12 piece Prawns
  • 200 g Squid
  • 1 puñado Clams
  • 8 piece Mussels
  • 1 l Fish stock or fumet
  • 1 pinch Saffron
  • 1 bunch Parsley
  • 1 bunch Fresh thyme
  • 1 piece Lemon
  • 1 tbsp Extra virgin olive oil
  • 1 pinch Salt

Preparation (10 steps)

Wash the quinoa

Wash the quinoa (350 g) very well under the tap until the water runs clear. Drain and set aside.

Chop spring onion, garlic and pepper

Chop the spring onion (1 unit) into pieces and place it in the Thermomix bowl. Add the clove of garlic (1 unit) and the small red pepper (1 unit) in pieces. Program 3 seconds/speed 5.

Sauté the vegetables

Thermomix® Setting

Add a splash of extra virgin olive oil to the bowl. Program 3 minutes/120°C/speed 1 to sauté the spring onion, garlic and pepper.

Add tomato and cook

Thermomix® Setting
5 min/248°F/Speed 1 120

Add the natural chopped tomato (50 g) to the bowl and program 5 minutes/120°C/speed 1.

Incorporate the quinoa and vegetables

Incorporate the washed and drained quinoa (350 g) into the bowl. Add a pinch of salt, the chopped flat green beans (4 units) and the peas (1 handful). Stir with the spatula.

Add the stock and saffron

Add the fish stock or fumet (1 l) and the saffron to the bowl. Program 12 minutes/100°C/speed 1.

Add the clams

Add the clams (1 handful) to the bowl and program 5 minutes/100°C/speed 1.

Incorporate the seafood

Thermomix® Setting
5 min/212°F/Speed 1 100

Add the prawns (12 units) and the chopped squid (200 g) to the bowl. Program 5 minutes/100°C/speed 1. Monitor the liquid level and control the heat.

Add the mussels

Thermomix® Setting
2 min/212°F/Speed 1 100

Add the mussels (8 units) to the bowl and program 2 minutes/100°C/speed 1. Monitor the liquid level and control the heat.

Let it rest

Let the quinoa paella rest covered for a few minutes before serving. Serve with chopped parsley, fresh thyme and a few slices of lemon to taste.
