Description

This recipe for refrigerator bread rolls makes it possible to bake fresh rolls at any time. The dough is prepared in the Thermomix® and can be stored in the refrigerator for up to 3 days. Ideal for a relaxed breakfast or brunch on the weekend. The preparation is straightforward and the rolls are super fluffy.

Ingredients (7 ingredients)

  • 1000 g Wheat flour W700
  • 20 g Salt
  • 15 g Sugar
  • 20 g Fresh yeast
  • 40 g Soft butter
  • 650 ml Cold water
  • 20 g Baking malt

Prepare dough

Thermomix® Setting

Put 1000 g wheat flour W700, 20 g salt, 15 g sugar, 20 g fresh yeast or 1 package dry yeast, 40 g soft butter or 30 g oil and 650 ml cold water into the mixing bowl and knead for 4 min./kneading setting.

First short rest

Let the dough stand in the bowl at room temperature for 20–30 minutes.

Dough in the refrigerator

Place the dough, loosely covered (lid only placed on top), in a bowl and store in the refrigerator for 24–72 hours.

Cut dough

Tear off or cut about 80–90 g of dough for a bread roll.

Shape bread rolls

Tightly shape bread roll (important for oven spring) or form into sticks.

Let rise briefly

Let the shaped bread rolls rise, covered, at room temperature for 20–30 minutes.

Bake bread rolls

Preheat the oven to 240–250 °C. Bake the bread rolls with steam (water/ice cubes on a hot tray) for 15–18 minutes.
