Description

This pasta dish with chicken is a real treat and super quick to prepare! The combination of creamy tomato sauce, fresh arugula and tender chicken is simply unbeatable. I especially like to make it in the summer when the tomatoes are nice and aromatic. If you like it a little spicier, you can add a little more chili powder. An ideal dish for a quick lunch or an uncomplicated dinner with friends. And the best thing: it's ready in no time!

Ingredients (11 ingredients)

  • 350 g Tomatoes, fresh or peeled tomatoes from the can
  • 1 bunch Arugula
  • 350 g Chicken breast fillet(s)
  • 4 clove Garlic
  • 2 tbsp Olive oil
  • 100 g Cream or reduced-fat cream
  • 1 tsp Tomato paste
  • to taste Salt
  • to taste Chili powder
  • 400 g Penne or Fusilli
  • Parmesan, freshly grated

Preparation (8 steps)

Cook pasta

Cook 400 g Penne or Fusilli al dente in a separate pot according to the package instructions. In the meantime, start preparing the sauce.

Chop garlic

Peel 4 cloves of garlic, place in the mixing bowl and chop for 3 sec./level 7. If necessary, push down with the spatula.

Sauté tomatoes and garlic

Add 2 tbsp olive oil and 350 g diced tomatoes (fresh or canned) to the mixing bowl and sauté for 5 min./120°C/level 1.

Refine sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 1 tsp tomato paste and 100 g cream to the mixing bowl and simmer for 5 min./100°C/level 2.

Season sauce

Thermomix® Setting
10 sec/Speed 3

Season the sauce with salt and chili powder to taste and stir for 10 sec./level 3.

Add chicken

Thermomix® Setting
2 min/194°F/Linkslauf Speed 1 90 Reverse

Fry 350 g chicken breast fillet (cut into strips) in a separate pan with a little oil until cooked through. Then add the chicken to the mixing bowl and heat for 2 min./90°C/reverse rotation level 1.

Mix in arugula

Add 1 bunch of chopped arugula to the mixing bowl and stir in for 5 sec./reverse rotation level 2.

Serve

Mix the sauce with the cooked pasta and serve immediately. Sprinkle with freshly grated Parmesan cheese as desired.
