Description

This Paraguayan corn cake, known as Paraguayan Soup, is much more than a soup. It is a hearty and delicious dish, perfect to share with family or friends. The combination of the sweetness of the onion, the creaminess of the cheese and the texture of the corn make it irresistible. I have been preparing it for years and it is always a success. It is ideal for a comforting lunch or dinner, especially on the cooler days. Go ahead and try this traditional recipe and surprise everyone with an authentic flavour!

Ingredients (9 ingredients)

  • 3 piece large onions
  • 3 tazas water
  • 1 tbsp coarse salt
  • 0.75 cup pork lard
  • 4 piece eggs
  • 350 g fresh cheese
  • 650 g corn flour
  • 1 cup curdled or natural milk
  • 1 tbsp cream (cream)

Preparation (8 steps)

Chop the onion

Place the 3 large onions in the bowl and chop for 3 seconds at speed 5.

Boil the onion

Add the 3 cups of water and 1 tbsp of coarse salt to the bowl. Program 10 minutes, temperature 100°C, speed 1.

Cool the onion

Pour the mixture into a container and let it cool completely.

Beat the lard

2 min/Speed 3.5

Place the ¾ cup of pork lard in the bowl and beat with the butterfly attachment for 2 minutes at speed 3.5.

Add the eggs

Thermomix® Setting
1 min/Speed 3.5

Add the 4 eggs one by one to the bowl, continuing beating with the butterfly attachment for 1 minute at speed 3.5.

Incorporate the cheese

Add the 350 g of crumbled fresh cheese to the bowl and mix for 15 seconds at speed 3 with the butterfly attachment.

Add the onion and liquids

Add the boiled onion with the water to the bowl. Gradually incorporate the 650 g of corn flour, alternating with 1 cup of curdled or natural milk and 1 tbsp of cream (cream). Mix for 30 seconds at speed 4.

Bake

Pour the mixture into a large, greased and floured baking tin. Bake in a preheated oven at high temperature (200°C) for 1 hour. (This step is performed outside the Thermomix).
