Description

  • 5 piece Chicken thighs
  • 3 litros Water
  • 0.5 pieza White onion
  • 2 gramos Salt
  • 0.25 pieza White onion
  • 1 clove Garlic
  • 10 pieza Guajillo chile
  • 1 gramo Salt
  • 750 mililitros Water
  • 20 mililitros Oil

Preparation (8 steps)

Cook the chicken

Thermomix® Setting
30 min/212°F/Giro inverso/Velocidad cuchara 100 Reverse

Wash the 5 chicken thighs very well. Place the thighs in the Thermomix bowl. Add 3 liters of water, ½ piece of white onion and 2 grams of salt. Program 30 Min./100°C/Reverse rotation/Spoon speed.

Reserve the cooked chicken

Remove the chicken from the bowl and reserve. Discard the cooking water and the onion.

Prepare the guajillo chiles

Open the 10 guajillo chiles, remove the veins, seeds and stem.

Cook the chiles

Place the clean guajillo chiles in the Thermomix bowl. Add ¼ piece of white onion, 1 clove of garlic and 750 milliliters of water. Program 5 Min./100°C/Speed 1.

Grind the sauce

Thermomix® Setting
1 min/Velocidad 10

Add 1 gram of salt to the bowl. Grind the chiles, onion, garlic and cooking water, programming 1 Min./Speed 10.

Sauté the sauce

Thermomix® Setting
5 min/248°F/Velocidad 1 120

Pour 20 milliliters of oil into the Thermomix bowl. Program 5 Min./120°C/Speed 1. Pour the crushed sauce into the bowl and program 10 Min./100°C/Speed 2.
