Description

This creamy pumpkin mushroom rice dish with rice, pumpkin, button mushrooms, onions, and garlic is a vegetarian main course for the autumn season. Preparation in the Thermomix® takes about 30 minutes and yields 2 servings. Ideal for a quick, hearty meal.

Ingredients (10 ingredients)

  • 250 g Rice
  • 1 red Onion
  • 2 Zehen Garlic
  • 250 g brown Button mushrooms
  • 500 g Hokkaido Pumpkin
  • 2 EL Clarified butter
  • 200 g Cream
  • 2 EL chopped Parsley
  • Salt
  • Pepper

Preparation (6 steps)

Cook rice

Cook rice according to package instructions in a separate pot or rice cooker. In the meantime, continue with the remaining steps.

Chop onion and garlic

Peel the red onion and cut into quarters, and add the garlic cloves to the mixing bowl and chop for 3 sec./speed 5. If necessary, use the spatula to push down from the edge.

Sauté onion and garlic

Add 2 tbsp clarified butter to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add mushrooms

Add 250 g sliced button mushrooms to the mixing bowl and sauté for 5 min./120°C/reverse speed 1.

Add pumpkin and simmer

Thermomix® Setting
10 min/212°F/Linkslauf Speed 1 100 Reverse

Add 500 g Hokkaido pumpkin in bite-sized pieces, 200 g cream and 2 tbsp chopped parsley to the mixing bowl. Season with salt and pepper and simmer for 10 min./100°C/reverse speed 1 until the pumpkin has the desired consistency.

Season and Serve

Season the pumpkin and mushroom pan with salt and pepper and serve with the cooked rice.
